Beef Enchiladas


Ingredients:
  • 10 tortillas
  • 2 c of shredded or cubed Beef (Good way to use left over Roast)
  • 1 can cream of chicken soup
  • 1 16 oz can tomato sauce
  • 2 cup rice
  • 1 can black beans drained
  • 1 package of taco seasoning
  • 2 cups of cheese
Directions:
  1.  In a pot on medium heat add cream of chicken soup, tomato sauce and 1/2 package of taco seasoning. Bring it to a boil and take off the heat. 
  2. Take half of the sauce pour into the bottom of a greased 9 by 13 pan.
  3.  In a bowl mix together meat, rice, and beans with 1/2 package of taco seasoning.
  4. Put some of the beef mixture into a shell top with cheese and roll the shells and place into the sauce in the pan.
  5. Pour the rest of the sauce over the tortillas and top with remaining cheese.
  6. Bake on 350 degrees for about 35 minutes.
**This meal can be frozen and eaten for later.  Freeze before baking.
