2 eggs
2/3 c olive oil
1 1 /3 c milk
3 c tapioca flour
1 c grated cheese (cheddar/mozerrella mix)
1 t salt
Directions:
- Preheat oven to 400 and grease mini muffin pans
- Put all the ingredients in the blender, liquid ingredients first. Blend until smooth. Use a spatula to scrape the sides and blend again.
- Bake in the over for 15-20 minutes until all puff and slightly browned. Remove and let cool
